Low-fat stews laden with vegetables make excellent main dishes for cold winter nights. The recipes presented are: turkey leg osso buco; lamb, sweet potato and curry stew; garbanzo bean, lentil and vegetable stew; and Italian-style seafood stew.

Squash time: winter varieties bring extra nutrition to the holidays

Winter squash is rich in fiber, potassium, vitamin C and beta carotene and a half cup serving is only about 40 to 55 calories. Several recipes are presented including ginger-pumpkin muffins and winter squash and chicken stew with Indian spices.
