Red and dessert wine and full-flavored beer are currently the favorite drinks in bars. While the rise in sales of red wine began in 1991 when its positive health effect was reported, dessert wine gained popularity in restaurants. Flavored beer increased the market share of small brewers.

Semillon is seen as a dry wine that is sweet and can be used as a complement to a variety of foods. Signorello Vineyards in Napa Valley, CA, has invested heavily by aging the wine in French oak casks.
