Article Abstract:
The potato industry has been the largest industry in Aroostook County, ME, since the mid-1700s. Many of the crops are picked mechanically, but smaller farms still hand-pick them. Recipes for potato and broccoli soup, double chocolate potato party squares, potato lasagna, and potato pan rolls are included.
