The degradation of phytic acid in legumes prepared by different methods
Article Abstract:
A study conducted to determine the effect of different methods of food preparation on phytic acid degradation reveals that the various methods of food preparation have limited effect on the phytic acid content in pulses. The different results of this study are due to the change in the methods and different time periods for food preparation. The need for a standard method for the determination of phytic acid is addressed.
