Building a braise

Braised dishes are cooked slowly in the oven in a small amount of liquid which both simmers and steams the food. This helps all cuts of meat stay tender and flavorful while preserving nutrients. Recipes for braised beef with prunes and caramelized onions, and braised vegetables with white beans are presented.
