Carotenoids in young and elderly healthy humans: Dietary intakes, biochemical status and diet-plasma relationships
Article Abstract:
High fruit and vegetable consumption is linked to reduced incidence of certain chronic diseases. A study examined the dietary concentrations of individual carotenoids based on an established dietary method, to determine plasma concentrations and consider the links between dietary and plasma carotenoid concentrations in younger and older groups of Irish adults. Beta-carotene and lycopene are the major dietary carotenoids, and beta-carotene is the major carotenoid in both age groups. Plasma beta-cryptoxanthin concentrations were strongly linked with both estimated record and food frequency questionnaire concentrations in each age group.

Low molecular weight plasma antioxidants and lipid peroxidation in maternal and cord blood
Article Abstract:
Comparisons between cord blood and maternal blood indicate a much higher concentration of the anti-oxidants sulphydryls, bilirubin and urate in cord blood. This protects cord plasma from lipid peroxidation and could help make up for its weak iron-binding properties.

Lipoprotein carotenoid profiles and the susceptibility of low density lipoprotein to oxidative modification in healthy elderly volunteers
Article Abstract:
A group of health elderly people were studied to determine antioxidant rates in plasma, low density lipoprotein and high density lipoprotien before and after supplementation with carotene of lycopene.
