Plasma ascorbic acid concentrations in the Republic of Karelia, Russia and in North Karelia, Finland
Article Abstract:
Supplemental vitamin C has a beneficial effect on plasma concentrations of ascorbic acid in men in the Republic of Karelia. An intervention study on men in North Karelia, Finland, and Pitkaranta, Republic of Karelia, was done to determine the likely effect of plasma ascorbic acid concentrations on mortality from cardiovascular diseases. Prior to the intervention, plasma levels of 93% of Pitkaranta men and 2% of North Karelian men revealed acute vitamin C deficiency. The intervention resulted in normal concentration levels for plasma ascorbic acid in 46% of men in the treatment group.

Diminishing or increasing contrasts? Social class variation in Finnish food consumption patterns, 1979-1990
Article Abstract:
A study was conducted to determine change in the dietary behavior of Finns during 1979-1990. Questionnaires were sent to a random sample population of Finns classified according to education-defined social class levels. Preferences were found to have shifted from butter, high-fat milk and coffee sugar to vegetables. This shift in food choices was more marked in men and women remained consistently health oriented. Food consumption patterns is determined by social class with standards set by men and women from the upper social classes.

The effect of breakfast cereal on diet and serum cholesterol: a randomized trial in North Karelia, Finland
Article Abstract:
Regularly eating breakfast cereal can bring a fall in daily intake of total and saturated fat, according to research into the impact of a high carbohydrate breakfast on diet and cardiovascular risk factors, particularly on the energy proportion of the saturated fat in diet and on serum lipids. A reduction in total and saturated fat intake can in turn prompt a fall in serum cholesterol. Reducing serum cholesterol is a key factor in preventing coronary heart disease.
