Small fry bite back
Article Abstract:
The restaurant market in London's West End has traditionally been dominated by large companies. However, smaller organisations are coming up with interesting new ideas. Alan Yau started a noodle bar called Wagamama and he is about to open new Chinese restaurants. Large operators are downsizing because of lack of available space and smaller companies are having to move further afield to find suitable properties. They are opening restaurants in pitches which were formerly used as offices. Only restaurants and bars with good themes are proving successful in out-of-centre pitches.
