Dried cherries have become fashionable in 1992 in North America. The dried sour cherries are chewy and aromatic. They are pitted, frozen and covered with sugar to infuse them. Michigan has suitable soil for cherry cultivation and the Montmorency variety is always plentiful. Pruneaux d'Agen are popular in several European countries but unknown in Britain. Le prunier d'Ente is a delicious plum, different from South African plums. In Agen, France, 3,400 small producers dry their own plums with high humidity.

The Parisian Flo group are including plated ready-meals in their traiteur range to meet demand. Traiteurs in France are quality caterers who display their food in retail stores. They face competition from chain stores because of a trend to buy ready meals. Food manufacturers supply supermarkets with boxed ready-meals associated with the names of famous chefs. Marks and Spencer in England, the instigators of box meals, are opening Speciality Delicatessens to sell short-life, unwrapped fresh food.

French organic food uses excellent production and cooking methods, displayed annually at Ascension weekend in May in Rouffach, a small village at the foot of the Vosges mountains, in a four-day festival. La Foire Europeenne du Pain, Vin et Fromage Eco-Biologiqes de Rouffach' was started in 1981 by Jean-Pierre Frick and Henri Bannwath, local wine-growers, to promote organic agriculture. In 1992 there were 300 exhibitors and 40,000 visitors. The fair is self-financing abnd strictly controlled.
