The eating quality of fish does not depend so much on whether or not it is frozen, but more on the way it is handled during and after netting. Sainsbury's supermarket assures the quality of its frozen fish by using direct suppliers who understand about the quality of the catch and use small boats to fish in close-waters. They also freeze the fish individually and according to the best season for the species; blind testing confirmed that the frozen product was even better than the fresh.

Supermarket stock requires long shelf-life and little waste, so fruit is often sold unripe or acidic. Marks and Spencer sell peaches from the Costieres de Gard area near St Gilles, France for hand-picked French peaches selected when sufficient sun has perfected the acidity and sugar balance. A penetrometer measures the resistance of the flesh to pressure and the juice is tested for sweetness. Temperature controls allow the peaches to be sold a maximum of four days after picking.

There are about 200 varieties, but Britain mainly offers the Burlat and the Washingdon from the US. These come from the sweet dessert cherry family Prunus evium sold as Bing in the US. Geans or wild cherries are also available in the UK Morello cherries from the sour cherry family Prunus cerasum are rarely found in the UK.
