Barley and peat on the Mull of Kintyre

The Springbank distillery at Campbeltown owned by Hedley Wright was restored by its workers to enable traditional production methods to be used again after about 20 years. The same workers steeped 12 tons of barley in water for three days and spread it over the floor to germinate for six days. This green malt was dried in a kiln over peat for 55 hours. Then it was infused in water and allowed to ferment with yeast for 72 hours. It passes through copper stills and into oak casks. Springbank and Longrow single malt whiskies are more challenging to make than the commonly found blends available.

Bottle-conditioned beer has a secondary fermentation on a sediment of live yeast. This gives very lively, spicy flavours. Oddbins launches Bottle-Conditioned Ale and Black Russian Beer in Feb 1993. Harveys Brewery of Lewes, Sussex, which has been operating since the 1790's, introduces a porter originally made in 1859. The choice of hops had to be checked to match the original acidity. This bottle-conditioned porter received traditional long maturation.
