Shudarushka bakery, Moscow, Russia, sells six to 10 rye breads and 15 wheat breads compared to the two or three varieties of Nareznoy Batons in the average Russian shop. The Borodinski square rye loaf, spiced with cumin, is the most popular. Shudarushka is backed by Marks & Spencer and Ranks Hovis McDougall. Andersen Consulting found 24 state-owned factories serving 14,000 bread outlets. There was no planned maintenance, so factories became unhygienic and dangerous. Distribution was haphazard. Marks & Spencer trained managers to realise their power and work in a demand-led structure.

In search of a Green grocer

Supermarkets appear uncommitted to organic food retailing, but it is still a thriving business for farm-based shops. Marks and Spencer has pulled out of organic food and only Safeway remains really committed to promoting it. Lower grade imports from large suppliers are undercutting local production and alternative methods of supply need to be explored such as Community Supported Farms and household buying cartels. Small farm shops may be a little dearer than supermarkets but they are generally flourishing as their produce is good.

Prince's originals take the biscuit

The Prince of Wales believes in organic farming and uses the organically-produced oats and wheatflour form his Home Farm in Tetbury, Gloucestershire, England, to make Duchy Originals. They are made at Shipton Mill, near Highgrove, using sunflower oil, raw cane sugar, bicarbonate of soda and salt. They are similar to digestive biscuits and oatcakes. The shelf-life is half that of ordinary biscuits, but they sell well in specialist food shops.
