Problems of a perfectionist chef
Article Abstract:
Stephen Bull has opened his fourth restaurant at Smithfield, London and in spite of the recession it is expected to be a resounding success. The site cost him 400,000 pounds sterling and getting a loan was not easy. He opened his third restaurant, Stephen Bull, in Blandford Street, Marylebone, London in 1989. The restaurant received magnificent notices from the newspaper critics and it was nearly always full. Mr Bull loves good food and always tries to ensure that, whatever his customers buy, it is the best example of that particular food they are ever likely to have had.

In a simmering stew over a few Michelin stars
Article Abstract:
There have been some protests in Italy about reports that Michelin Red Guides has downgraded Italian cooking, placing it behind French, German and British cooking. It is certainly true that the UK has more three-star restaurants than Italy, but a total of 212 Italian restaurants have Michelin stars, compared with only 67 in the UK. Italian restaurants are generally confident about their standards, and are unlikely to start offering British dishes.

The knives are out for Michelin
Article Abstract:
The 1993 Michelin Great Britain and Ireland guide was published in Jan 1993 listing only two three-star restaurants and 42 one-star restaurants compared to 19 and 502 in the French guide. Chefs decided to discount the publication. Its influence results in staff leaving and menus changing. British cooking is rarely starred. Michelin employs nine British inspectors to inspect 4-500 restaurants a year.
