Small pond, big fish
Article Abstract:
Some chefs are far too self-important, according to Rick Stein, who maintains close links with the local fishing community in Padstow, England, where he runs a famous seafood restaurant. He is very keen to introduce fish to a wider audience in the UK, and for this reason does not believe that it is wrong to write books and appear on television programmes. He takes a very simple approach to presenting his recipes, and for this reason has become popular with television audiences. However, people who work closely with him report that he can sometimes be very difficult to work for.

The Ruth and Rose experience
Article Abstract:
The best restaurants are those which feel like an extension of an ordinary home, according to Ruth Rogers, co-owner of the extremely popular River Cafe in Hammersmith, London, England, with Rose Gray. The restaurant, which celebrates its 10th anniversary in autumn 1997, now attracts many celebrities, and is also highly respected among chefs for its traditional Italian cuisine. Both women believe that their establishment should aim to cook Italian food to perfection, and they are careful to select ingredients with clear Italian origins.
