Cookin' lean: rich-tasting roasted-turkey broth

Roasted turkey broth is made by simmering in a stockpot a few vegetables with water and leftover turkey meat and bones that have been double-roasted. Fat is skimmed from the strained broth, and turkey meat is added. The recipe yields about 2.25 quarts of broth, which can be frozen until needed.
