A physician who needed to lose weight took classes at a culinary school to learn how to prepare good-tasting, low-fat food. He lost weight after he started using their techniques, and he created the CHEF Skills research program. The program is successful because people are able to cook low-fat food to their taste rather than being limited to a strict menu or be concerned with counting calories. Suggestions include buying fresh fruit and vegetables and planning dishes ahead. Exercise tips are also provided.

A dieter must learn the difference between appetite which is mental, and hunger, which is physical. Exercises are provided to help a dieter distinguish between the two and then to control appetite. Tips are given on ways to stop eating after hunger is appeased.
