Living colors
Article Abstract:
Vegetable and fruit colors can add a festive touch to meals, but the color-causing compounds themselves can be extremely healthy. A number of the pigments are actually antioxidants, and some of the phytochemicals may stop the formation of carcinogens. Colors and their food groups are discussed.

The story of a little girl from a remote Russian region of Perm, Siberia having a rare skin disease called epidermolysis bullosa (EB) is narrated. It is reported that a family from North Carolina fought against all odds to adopt the little girl and try to give her a happy family life.

Studies are beginning to indicate that the introduction of soy protein into the diet can lower cholesterol. In addition, there are indications that soy foods may decrease the risk of cancer and reduce the progress of osteoporosis. Research details are discussed.
