Amar Patel opened Indian Rice Facory in 1970, offering Torontonians old-fashioned and flavorful Indian food. Her restaurant is frequented by vacationers flying in from England. She would like more chefs to become more interested in learning how to cook her native cuisine, and feels that it is a shame that most culinary graduates believe that Indian food is all about curries.
