Article Abstract:
Seafood accounts for around 50% of restaurant sales, and several new species of fish are reaching the menus of Canadian restaurants such as kona kampachi, cobia, opakapaka and lehi. The most famous of the new varieties is the white wild sable fish, which is used to replace Chilean sea bass. Trends in seafood offerings are discussed.
