On-premise production of wines is becoming more popular among Canadian restaurants due to fine quality, cost and marketing advantages. Mini- wineries are generally displayed by restaurateurs because they believe customers find them attractive. The Canadian provinces of Alberta, Saskatchewan, Nova Scotia, P.E.I. and Ontario are presently permitting restaurants to manufacture their own wines as long as they are served on- premise.

The National Restaurant Assn reports that the idea of 'grazing,' eating little portions of food, is an emerging trend that is spreading across the North American continent. Previously relegated to the role of appetizers, foods such as tapas and mezes are making it into the menu of restaurants in North America as main fare. This is seen as proof that people are becoming more experimental with their eating habits.
