Five pillars of success: the divine secrets of the top operator segments
Article Abstract:
According to the recently held Foodservice Interchange Conference, five operator segments were responsible for 87% of the $1.8 billion sales growth achieved by restaurants in 2004. Casual-dining independents headed the list, followed by quick-service (QSR) coffee specialists, ethnic restaurants, QSR burger operators, and lunch at family/midscale restaurants. Four key factors, which were common to all the five segments, attributed to their success.

The quick service restaurants have seen one of the worst times in the first quarter of 2003. But innovative marketing has seen growth in segments like main - dish salad which was ordered 27 million occasions from 16 million times in 2002 for same period.
