Children's consumption accounts for 40% of sales. The market for teenage consumers has risen with the introduction of more products, with Bizz from Wall's leading sales. The adult market is more difficult to track.

There are a number of ways in which leisure managers can ensure that sales of ice cream products are maximised. The most effective way to sell ice cream is by count line products from a conservator cabinet display, but margins are generally lower than with soft serve ice cream or a scooping cabinet. Leisure retailers should ensure that they offer a mix of cheap and expensive products, as profit levels from cheap products tend to be low. Many manufacturers have launched new products recently, and these target different budgets and age ranges.
