For various reasons, a family-owned restaurant or other business, has to face the issue of succession. This is difficult when it involves non-family succession. The owner must one day step cleanly out of the role of manager and let someone else - not family - step in. Often the transition is smoothed if the 'heir' has grown up with the operation and is is not a stranger to it or to the staff.
