Operations report
Article Abstract:
The Canadian foodservice industry has posted a profit margin of 6.4% in 1998, a significant growth compared to 5.2% in 1996. The profit margin is seen to have bottomed out after almost a decade of steady decline from 9.6% in 1990 to 5% in 1994 where it remained through to 1996. The improvement in profit margin has been attributed to a decrease in operating expenses, particularly the cost of sales and labor costs.
