At what price?
Article Abstract:
Restaurateurs do a balancing act when it comes to pricing menus, careful not to overprice their restaurants out of the market nor sell too cheaply. For instance, Larry Stewart, chef of the Hardware Grill in Edmonton, says the restaurant does regular monthly inventories to determine costs and menu prices. He added that they go by customer response, emphasizing that they have yet to have a patron who complained about their prices. Other restaurant owners would also not hesitate to raise the price of a dish so long as diners are told that the dish is special and worth more.
