Canadian airline foodservice is conforming to the demands of Canadian diners who care for appearance, taste and nutrition in their food even when they are 30,000 ft in the air. Major airlines have, therefore, resorted to hiring their own executive chefs. Some even allow passengers to order their main course prior to flight departure. Another emerging special dietary trend is vegetarianism which makes the job of a food and beverage manager much more challenging.
