Eight experts in various fields gave their views on the interrelated trends that will shape the Canadian foodservice industry into the new millenium. Among these trends are the increasing role of biotechnology in the food sector and the use genetically modified foods, the shift towards suites or integrated pieces of kitchen equipment, the shortage in manpower and the resulting increase in wages, the importance of food safety regulations and the government involvement in the industry.
