Trends in commercial and non-commercial foodservice
Article Abstract:
Canada's foodservice industry is projected to post sales of C$36.2 billion in 199. The commercial foodservice and the non-commercial foodservice sectors account for 78% and 22% of the sales, respectively. Commercial foodservice sales are expected to increase by 4% to C$28 billion in 1999. Non-commercial food service sales vary according to sub-sectors. The sales in the accomodation foodservice, leisure foodservice and department store foodservice are projected to grow by 2.2%, 3% and 3.3%, respectively.

There are 97,000 restaurants, hotels and other off-premise dining and take-home establishments in Canada, larger than the Statistics Canada count of only 63,000 units. Factors affecting the discrepancy, and statistical information such as type of foodservice operations, staff count, average customers and average check are also provided.
