Article Abstract:
The 15th Annual Foodservice Interchange Conference held on January 30, 2006 in Brampton Ontario, discussed several topics such as the battle of the bulge, the breakfast boom, food-borne illness scares, organic- and health-crazed consumers and smaller food portion. The effects of the baby boom generation were also discussed in the conference. A major trend identified at the conference was the need for businesses to evolve along with its core customer base.

The U.S. foodservices industry is expected to reach record sales of $537 billion in 2007, which is an increase of 5% over the previous year. Most of the food trends in the country, which focus on healthier choices, are starting to penetrate the Canadian market. Other trends such as the downsizing of food items, are also discussed.
