Josu Zubikarai of Taberna del Alabardero is the chef responsible for introducing Spanish cuisine to Washington, DC. Zubikarai turned to cooking professionally at 19, when he started as a ship's cook. He has won several awards while at Taberna del Alabardero, including Washingtonian Magazine's Restaurateur of the Year in 1993.
