Kansas City is considered the barbecue capital of the world and has more than 90 barbecue restaurants. The key to good barbecue is slow-cooking the meat over a smoldering wood fire. Each restaurant has its own methods and spice mixture. Five barbecue restaurants are recommended.

The joy of pho

The national Vietnamese dish, pho, is a noodle soup dish spiced with tangy flavors such as cilantro, cinnamon, or lemon juice. A traveler visiting Vietnam discovers that the different regions have a distinct way of preparing pho, but most combine shrimp, pork and beef as well.

The joy of jerk

Jerk is both a cooking method and a dish, applicable to fish, chicken, pork or sausage. The meat is cooked in a pit on a green-pimento-stick grill, which burns and smokes the meat. A spicy pork tenderloin marinade recipe is provided, along with other serving suggestions.
