Article Abstract:
Streptococcus thermophilus produces the most exopolysaccharide (EPS) when grown on lactose and glucose. The composition of EPS remained constant at 4 molecules of galactose for every molecule of glucose regardless of which carbohydrate was used as a substrate.

Diversity of heteropolysaccharide-producing lactic acid bacterium strains and their biopolymers
Article Abstract:
Thirty-one lactic acid bacterial strains from different species were evaluated for exopolysaccharide (EPS) production in milk. Thermophilic strains produced more EPS than mesophilic ones, but EPS yields were generally low.

Indication that the nitrogen source influences both amount and size of exopolysaccharides produced by Streptococcus thermophilus LY03 and modelling of the bacterial growth and exopolysaccharide production in a complex medium
Article Abstract:
An experiment was conducted to determine the influence of carbon/nitrogen ratios on the production of exopolysaccharides by Streptococcus thermophilus LY03 in a complex medium at controlled optimal temperature and pH. Findings indicate that the bacterium Streptococcus thermophilus LY03 produces a high molecular mass and a low molecular mass exopolysaccharide fraction of which the proportion is dependent on the carbon/nitrogen ratio of the fermentation medium. A model that describes both S. thermophilus LY03 growth and exopolysaccharide production is discussed.
