Research has been conducted on the volatile fatty acids. The effect of the volatile fatty acid changes on the bacterial population in the broiler chicken ceca during growth has been investigated.

Article Abstract:
The bacterial production of volatile fatty acids such as acetate, propionate, and butyrate can protect broiler chickens from colonization by Salmonella enterica serovar enteritidis. This explains why young broiler chickens that lack a mature cecal microflora are so susceptible to Salmonella colonization.

Effect of fermented feed on the microbial population of the gastrointestinal tracts of pigs
Article Abstract:
Fermented feed can decrease the number of Enterobacteriaceae in a pig's digestive tract. On the other hand, the number of lactobacili increases. Fermented feed has high levels of lactic acid, volatile fatty acids, lactobacilli and a low pH. All of these factors can affect the microbiology of the digestive tract.
