Localization and characterization of alpha-glucosidase activity in Brettanomyces lambicus
Article Abstract:
The isolation of Brettanomyces lambicus from a typical overattenuating Belgian lambic beer showed that the enzyme production by intracellular alpha-glucosidase activities was higher than enzyme production by extracellular activities. The purification of the enzymes produced by intracellular and extracellular activities by ammonium sulfate precipitation, gel filtration and ion-exchange chromatography revealed that the intracellular alpha-glucosidase demonstrated optimum activity at 39 degree centigrade and pH 6.2, while the extracellular enzyme showed optimum activity at 40 degree centigrade and pH 6.0.

Nitrogen availability of grape juice killer yeast growth and fermentation activity during mixed-culture fermentation with sensitive commercial yeast strains
Article Abstract:
A study on the nitrogen availability of grape juice was conducted to determine its effectiveness in limiting the killer yeast growth and fermentation with sensitive commercial yeast strains. The research made use of various conditions in sterile grape juice fermentation. Results suggest the existence of a limitation of assimilable nitrogen. However, this situation is not ideal for the development of killer yeast in small killer cell populations.

Isolation of auxotrophic mutants of diploid industrial yeast strains after UV mutagenesis
Article Abstract:
The rates of survival of isogenic laboratory haploid and diploid strains following UV irradication or treatment with the chemical mutagen ethyl methanesulfonate (EMS) are compared. It is found that the isolate auxotrophic mutants of diploid industrial yeast strains are misleading and the genetic techniques used for haploid laboratory strains are applicable for the purpose.
