Biodiversity and classification of lactoccocal phages
Article Abstract:
An in-depth review of the classification of Lactococcus lactis phages was performed and reference phages as well as unclassified phages from international collections were analyzed by stringent DNA-DNA hybridization studies, electron microscopy observations and sequence analyses. The multiplex PCR method used for the rapid identification of phages from the three main lactoccocal groups was improved and tested against the other groups none of which gave a PCR product, confirming the specificity of this detection tool.

Development and use of a screening procedure for production of alpha-acetolactate by Lactococcus lactis subsp. lactis biovar diacetylactis strains
Article Abstract:
A screening procedure isolates mutagenized Lactococcus lactis subsp. lactis biovar diacetylactis strains that produce alpha-acetolactate by directly detecting the presence of diacetyl. Strains lacking alpha-acetolactate decarboxylase accumulate this compound, which undergoes spontaneous degradation to yield diacetyl on agar plates. A colorimetric reaction detects the diacetyl produced by showing a red halo around the colonies.
