Molecular monitoring of the fecal microbiota of healthy human subjects during administration of lactulose and Saccharomyces boulardii
Article Abstract:
A long-term placebo-controlled crossover feeding study in which each subject received several treatments was performed to monitor the effect of a prebiotic substrate, a probiotic organism and their synbiotic combination on the fecal microbiota of three groups of 10 healthy human subjects differing in prebiotic dose and/or intake of placebo versus synbiotic. The study brought to light the capacity of an integrated approach consisting of denaturing gradient gel electrophoresis (DGGE) analysis and real-time-PCR to monitor and quantify pronounced changes in the feca microbiota of healthy subjects upon functional food administration.

Population dynamics and metabolite target analysis of lactic acid bacteria during laboratory fermentations of wheat and spelt sourdoughs
Article Abstract:
Population dynamics and metabolite target analysis of lactic acid bacteria during laboratory fermentations of wheat and spelt sourdoughs was described. Strains of Lactobacillus planatarum were found to be dominant some of the sourdoughs with no homofermentative strains, and besides lactic acid, ethanol, and mannitol, the production of succinic acid, amino acid metabolites is also seen.
