Sky Chefs is a specialist supplier of airline food, and this business has grown as airlines are increasingly contracting out the task. There are six companies with a stake of almost 67% in the global market for airline food. The company is dependent on major accounts, and has thin margins. It is not easy for airlines to cut direct costs, and suppliers have been squeezed instead. Suppliers can merge or diversify, but neither would solve the problem. Airline caterers could persuade airlines to value them more and use meals as a way to attract passengers.
