UK sales of cheese in 1998 amounted to 1.63 billion pounds sterling, up 12.2% from 1994, with volume sales reaching 316,800 t, up just 0.7%. The sector is dominated by hard cheese with a 69.6% value share, of which Cheddar is the most popular type. The cheese market is extremely fragmented, with private label having the highest penetration. Among the leading players are Northern Foods and Dairy Crest. The cheese market is forecast to fall to 315,400 t in 2003, worth 1.69 billion pounds sterling.
