Article Abstract:
In 1997, 1.2mn tonnes of canned vegetables were produced, down 4.2% from 1996. Canned peas production dropped 23.5%, production of canned peas and carrots dropped 16.4%, and canned flageolet beans dropped 3.5%. Production of canned sweet corn remained stable, production of canned macedoine of vegetables rose 7.6% and canned green beans rose 8.4%. Sales of sweet corn represented 1.247mn tonnes, up 0.9%, compared with 919,000 tonnes in France, down 1%, including 219,000 tonnes of maize. Sales of canned peas dropped 3%, sales of canned peas and carrots dropped 2.3%, while sales of flageolet beans stagnated and sales of canned macedoine of vegetables rose 5.5%. Purchases by restaurants and food services dropped in favour of frozen vegetables, and household purchases dropped 1.6%. Production of cultivated mushrooms dropped to 116,000 tonnes half-gross in 1997, while forest mushrooms represented 6,615 tonnes, down 9%, and truffle production came to 76 tonnes, up slightly. Sales of cultivated mushrooms came to 110,000 tonnes, stable compared with 1996. Tomato concentrate production came to 38,514 tonnes, and sales of specialities came to 48,900 tonnes. Sales are mainly of imports since the came to 80,000 tonnes for concentrates, including 34,600 tonnes made by French manufacturers and 176,700 tonnes for specialities.

France produced 106,500 tonnes of canned fish in 1997 in half-gross weight, compared with 114,100 tonnes in 1996. This increase is due to the production of herring, which came to 3,200 tonnes compared with 1,900 tonnes in 1996, and 'other products' 3,200 tonnes compared with 1,800 tonnes in 1996, with the production of other product categories dropped from 58,600 tonnes to 54,600 tonnes for tuna, from 18,500 tonnes to 15,600 tonnes for sardines, and from 33,300 tonnes to 29,800 tonnes for mackerel. However improved value compensated for this decline. The apparent sales of seafood products dropped from 271,700 tonnes half-gross in 1996 to 236,500 tonnes in 1997, while consumption slipped from 4.7 kilograms per capita per year in 1996 to 4.1 kilograms per capita per year in 1997. French shipments dropped from 115,000 tonnes half-gross in 1996 to 107,500 tonnes in 1997. French canned seafood product imports dropped from 217,700 tonnes half-gross in 1996 to 199,800 tonnes in 1997, while French exports rose from 61,100 tonnes in 1996 to 70,800 tonnes in 1997. The Ivory Coast is by far the leading tropical tuna supplier for France, representing 52% of the volume, followed by Senegal.

The production of the processed meats companies represented only a little over 1.13mn tonnes, up only 0.5% from 1996, mainly due to the rise in the prices of raw materials from 1996 to 1997. The development of production varies widely according to product category. While cooked poultry meat production represented 20,284 tonnes, up 22.4%, and ready meals represented 170,729 tonnes, up 106%, the production of mixed dry sausages fell to 7,139 tonnes, plummeting 20.7%, while the production of canned beef dropped to 18,192 tonnes, down 13.6%.
