Of the five nations, France was the last with a consumer catering market valued at a mere $27 billion. Consumer catering market's performance varied across the major markets due to a weak consumer confidence. Weak consumer confidence affected spending on non-essential items in some markets, while in other market strengthening recovery, coupled with more hectic lifestyles to increase demand for high-quality, quick-service meals and snacks.

The nation almost posted double the level of its nearest rival in Europe, Italy at a comparative per capita expenditure of $824,670. France was ranked the last in the five-nation review in 1997 rating with a comparative per capita expenditure of $465,940, despite a strong cultural link with eating out. With Spain excluded, Continental Europe recorded per capita expenditures of $466 million to $825 million.

Spain is the leading consumer catering market in a five-nation review in Europe in 1997 with 123 consumers per outlet relative to size of population, followed by Italy. The ranking shows the continuing importance of the large number of traditional, independent family-run outlets, which the five countries. Small operators still tend to represent the majority of consumer catering outlets despite chain operators becoming more common. Germany recorded the least served in terms of catering outlets per head of population with 1,471 consumers per outlet in 1997.
