Sweet biscuits dominates the market for sweet and savoury biscuits in Italy with 58.4% of volume sales in 1997, increasing by 1.8 percentage points over the five-year review period. The boost in volume sales of sweet biscuits has been attributed to consumers' move towards increased snacking, which, in turn, influenced manufacturers to come up with single-serve portions or large packet containing single-portions. Bread substitutes ranks second in terms of growth in volume sales, representing 26% of volume sales in 1997 and increasing two percentage points over the five-year period. Savoury biscuits represents only 72,000 tonnes, or 15.6% of the market in 1997.

Outgoing tourism market of Italy has declined by 6.1% in per capita spending due to higher cost of travel as the Italian lira devaluated from 1993 to 1997. Italy's outgoing market ran similar to Japan's, which reported a decline in per capita spending by 1.4%. Spain's outgoing market also declined by 3% from 1995 to 1997 also because of high cost of travel. Only France reported an increase in outgoing tourist per capita expenditure considering the average bed nights spent overnight by a French tourist is eight nights.
