Article Abstract:
University of Southern California's James Dwyer has found that high doses of vitamin C, or 500mg daily, appears to be linked to a propensity to thicker carotid arteries. This finding runs counter to some beliefs about vitamin C giving protection against heart disease, and high consumption of fruit and vegetables has been linked to lower heart disease rates. The findings have been disputed and are preliminary, but the interaction between vitamin C and iron, or vitamin C and collagen synthesis could provide an explanation.
