FRANCE: THE THIRD CHEESE DEPARTMENT
Article Abstract:
The sales of cheese in the fresh-cut cheese department (cheese cut and packaged by the retailer came to 35,000 tonnes in 1995. According to Stratega, this amount will double by 2005. However, certain retailers have given up offering such a product because of the lack of time and lack of training for staff. In order to encourage them to take this stem, Entremont and SAFR have introduced two lines of cut cheese, packaged and labelled with their brands. However, the cheeses are higher priced.
