Michelin Guides may appear to be out of touch, but they make a major impact in the world of restaurants. There is little information on how the awards system works, and the criteria used for awarding classifications. The guide covers ethnic restaurants in France, as well as some establishments outside France, in some 12 European countries. A good rating in the guide was once more likely to bring commercial success, but this is less true. There is also a value category, reflecting economic pressures in France.
