The retail market for meat and poultry in the UK reached 7.5 billion pounds sterling in 1993, with a volume totalling 2.1 million t. Some 40% of volume sales was accounted for by red meat, followed by poultry with a 28% market share and bacon with a 21% share, although bacon's share is falling steadily because of the decreasing popularity of cooked breakfasts. One of the largest meat suppliers in the UK is Hillsdown Holdings. It is forecast that total meat sales will fall from 2.14 million t, worth 7.12 million pounds sterling, in 1995, to 2.12 million t, worth 7.32 million pounds sterling in 1998.
