About 20% of fresh potatoes bought in plastic bags show signs of turning green, and even 25% had severe mechanical damage. Generally, green potatoes do not cause health problems unless eaten in large quantities. Consumers should remove potatoes from the plastic bags after purchasing, and store them in a cool, dark, dry place. A table of nutritional content of potatoes and potato products is included.
