Many of the Central Asian republics are led former communist leaders who know to claim to be nationalists. One of these men is Rakhmon Nabiev, president of Tajikistan. Central Asian countries must decide whether to form Islamic governments like Iran's, or a democratic government like Turkey's.

Two new books, 'Eskimeyen Tatlar' and 'Classic Turkish Cookery,' contain recipes that elevate the perception of Turkish cuisine to new levels. Much of the country's cuisine was created in the kitchens of the palaces but recipes were not written down, but a changing economy has changed this.
