The UK's onboard catering market amounted to 903 million pounds sterling in 1998, rising by 2%/y since 1992. The main reason for the growth is the increase in passenger traffic, with air passengers up 76% between 1987 and 1997, sea travel up by 38% and rail travel rising by 3%. Airline onboard catering was valued at 575 million pounds sterling in 1998, while the onboard ferry catering market reached 275 million pounds sterling. The total onboard catering market is set to amount to 882 million pounds sterling in 1999, at current prices, rising to 1.11 billion pounds sterling by 2003.

Contract catering
Article Abstract:
There has been a 21% increase in contract catering turnover in real terms in the UK since 1990. The sector has become very competitive, with larger operators frequently using takeover or merger to remove rivals, maintain margins and obtain contracts. The most rapidly expanding areas of the contract catering market are in the public sector. They include state schools, central government departments and agencies and local authority police and fire services. There is still considerable potential for further expansion in contract catering.
