The restaurants sector is expected to keep its foremost position in the French consumer catering market, with a forecast value share of 62.4% by year 2002. However, real value growth for this sector is anticipated at only 1.3% from 1997 to 2002, compared to a 31.4% value growth forecast for fast-food restaurants, which are anticipated to reach value sales of FF20,375 million in 2002. Fast-food restaurants are thus anticipated to move just behind cafes and bars, which are expected to barely retain their second-place standing with a forecast value sales of FF21,926 million in 2002. The hotel catering sector will remain the least substantial component of the consumer catering market, with forecast value sales of FF18,840 million in 2002, compared to FF18,583 million in 1997.

However, restaurants account for the biggest market sector, with shares of 63.5% in terms of value and 54.7% in terms of the number of outlets in 1997. Although the number of consumer catering outlets decreased by 3.8% to about 147,948 outlets in 1997, turnover reported by these establishments increased by 1.8% in current value, to FF157,807 million in 1997.
