Plain savoury biscuits have continued to hold the largest share of the savoury biscuits category, accounting for 69% of volume sales in 1997. Crackers in Italy are viewed as substitute at meal times if fresh bread is not available and as snack usually late in the morning to stave off hunger until lunch. Originally, crackers are available in salted and unsalted varieties and later included the wholemeal/whole grain varieties as consumers begin to place more emphasis on a healthy diet.Flavored crackers, which come in cheese, olive oil and oregano flavors, have been the latest innovation by manufacturers.

French toasts dominated the bread substitute subsector of the sweet biscuits category, accounting for 56.1% of value sales in 1997. The marginal increase in the value share of french toasts has been attributed to the rising popularity of eating french toasts with jam during breakfast. Crisp rolls are the second most significant type of bread substitute with value share rising by two percentage points over the review period. Breadsticks, which originally served as substitute for fresh bread, were the most popular type of crisp rolls due to their healthy nutritional content.
